Ohhh The Best Laid Plans . . .LOL
Sometimes it’s comical how cliches become applicable to our everyday lives. Yesterday is a perfect example of “man plans & Hashem (Gd) laughs”. If you are following my posts, you will know that yesterday was to be a Meatless Monday dinner. I was super excited for the meal I had planned and had even gone online and placed an Instacart order Sunday evening to make sure the ingredients would all be on hand. Yeah right, this was my first error. Well, placing an order right before going to bed probably isn’t the best idea. Somehow the order that I thought was to be delivered on Monday morning by noon was actually scheduled to be delivered Tuesday morning. I tried rescheduling the delivery time. Nope, nothing in the time slot I needed available. Ok maybe with a different delivery service. Nada. Hmmm . . . brilliant maybe someone could pick up an order for me. Ha-ha no curbside or pickup time slots available either. I was starting to become frazzled to say the least. So, ok the logical thing to do seemed to be to contact Instacart customer service. Getting through wasn’t too difficult (keeping the number in my directory has been a blessing) but the representative was beyond less than helpful. After a wasted 20 minutes and completely becoming the hysterical customer of any service representative’s nightmares I just gave up and hung up. BH (thank GD) for awesome neighbors who saw my request on our local WhatsApp group. I didn’t get all of the things needed to make the meatless meal but the meal that was being made to go to a care calendar recipient was rescued. So now the issue of what to serve in place of the planned meal. Being flexible with my weeknight menu has been key in making it effective. Of course the goal is to have things the evening they are planned for but as you can see that is not always possible. No biggie. There were still plenty of leftovers from Shabbat and the pulled harissa chicken that was to have been made into burritos ended up being the perfect quick fix to my dilemma. DH had his over a challah roll and I had mine with some farro and a large, tossed salad. Tonight we will have a meatless meal, and all is well.
