Every Week I Post a Menu

Hi y’all. It’s Sunday and it has become a habit of mine to post a weekly dinner menu to my WhatApp group. Going forward i will also be posting that here. This menu helps me to prepare for the weeks grocery shopping and it allows me to incorporate the foods I am preparing with my online students into the meals my husband and i will eat during the week. You will notice that there are some themes that pop up often; Meatless Mondays, Taco Tuesdays, Take Out themed nights, etc. Besides cooking for my husband and myself I teach a few online classes a week and I often send meals to people in my community that are recovering from illness or in need of meals for one reason or another. A few things that I have learned over the years is that if the recipe can be doubled easily do it! Make two lasagnas, two meatloaves or whatever it is that you are preparing. One for today and one for the freezer for when it’s needed. Even with a planned menu things happen and having something in the freezer that can be ready on short notice is often a major stress reducer. Below is the menu for this week. Asian Seasoned Beef in Collard Green Wraps w/ peanut dipping sauce & Steamed Veggies 

Thursday:

Soup & Sandwiches 

Or Take Out
