I know I have been absent a bit over the past few months and I apologize. Life has been different and it took some adjusting to. Writing and working for a magazine is time consuming, cooking for clients, getting my artisan spice rub business off the ground, and dealing with multiple health issues leaves little time for much else. But as the above saying so aptly says we eat when the food is ready but we speak (in my case write) when the time is right.
The time is right today! All of the projects I have been working on are moving along and I have a new project in the works, but that is getting ahead of myself and you will need to be patient while all of hte details are worked out. The magazine, UNORTHOBOXED is in it’s 6th edition and our readership grows everyday. Writing for the magazine has allowed me to meet some incredible people both known in the food world and behind the scenes and I love being able to bring you new recipes and concepts in the world of kosher cooking. If you haven’t explored my store here on the website or tried my artisan rubs you really should. They will change the way you cook just about everything from proteins to vegetables. While unfortunately dealing with some health issues I have been cooking away and the winter months have seen lots of hearty stews, casseroles and comfort foods come across our table. Some of these have been made with our low carb plant based diet in mind others have just been the tried and true recipes tha bring us a warm hug. Today’s lunch was one of those. It was gloomy and chilly all morning and I was feeling a bit blue. I just wasn’t in the mood for a salad or low carb anything. I needed to feel a little carby warmth. A smallish bowl of airfried fries with some cheese and parve gravy was just the thing. My version of poutine may not be authentic but for a girl from suburban Philadelphia who was first introduced to this in her late teens / early twenties on a trip to Burlington VT this is how I roll with it.
Shoshana’s Fast & Easy Poutine
Ingredients:
Frozen Crinkle Cut French Fries
Instant Parve Gravy Mix - your choice of flavor
Cheese Curds - Cottage Cheese, Shredded Cheese, Crumbled Farmer Cheese - really whatever you have on hand will work
Fresh Ground Pepper
Mayonnaise - optional
Step by Step Instructions:
Prepare the frozen fries according to the package directions and your preferred method. (I used my air fryer)
Prepare the gravy mix according to the package directions while the fries are cooking.
Place fries into an individual bowl or into a larger serving bowl if making more than one serving.
Crumble the cheese of choice over the fries.
Pour the HOT gravy over the fries and cheese.
Grind a few grinds of fresh black pepper over the gravy.
For a really decadent treat serve with a small cup of mayo to dip in as eating.
