Weeknight Menus Resume

Ahh, Pesach is over, the kitchen is no longer pesadich and it is time to resume regular weeknight menus. Below is the list of my first full week post Passover menus. Using up a bit of leftovers and not over doing it in the kitchen after a very labor intensive chag.

Week of April 16 - 20 Dinner Menus

Highlights of the Week alà Yampolsky Family Tradition 


When I plan my weeknight menus on Sunday mornings I try to incorporate any leftovers from the previous week's Shabbat into the meals so food will not be wasted. I will often change the presentation or use a leftover protein in a new dish to keep things interesting. One recipe this week is in place of poached chicken in our Waldorf salads. On Monday evening I will use the remaining pieces of schnitzel and chop those up into the salad. Each week is different and some leftovers lend themselves more readily to being reused in new ways. As a child my father invented what became known as garbage casserole. He would literally take a pound of cooked pasta and whatever leftovers he found in the refrigerator from the week and mix it all together with either tomato sauce or with a few cans of whatever cream of soup he had on hand. Most of the time this extended and finished off any leftovers from the fridge but on occasion things just didn’t work out. My cousins, the Yampolsky family, had a different way to handle leftovers. They would place all of hte leftovers into a divided bowl and spin that around on a lazy susan so each person at the table could take a bit of this and that to finish off whatever was left from the week’s dinners. Long gone are those old tupperware divided bowls but I like on occasion to serve food ala Highlights of the week style.
